Easy Roasted Vegetables

Ingredients

Scale
  • 1 Sweet Onion sliced thin
  • 1 Red Pepper sliced thin
  • 1 small Eggplant halved and sliced
  • 16 oz Portobella Mushrooms sliced
  • Sea Salt and Pepper to taste
  • 3 Tbs EVOO (extra virgin olive oil)

Instructions

  1. Preheat oven to 400 degrees
  2. Wash and slice veggies
  3. Add to a baking sheet in a single layer (try not to overlap)
  4. Sprinkle Salt and Pepper over veggies
  5. Drizzle EVOO over veggies
  6. Bake 20-25 minutes
