This 20 Minute Pineapple Fried Rice is so easy to make. Quick + Easy + Healthy + Gluten Free = Me Happy!

Ingredients

Units Scale
  • 3 cups cooked White or Brown Rice
  • 1/2 cup chopped Sweet Onion
  • 1/2 cup chopped Green Pepper
  • 1/2 cup chopped Red Pepper
  • 1/2 cup chopped Orange Pepper
  • 1/2 cup chopped Green Onions
  • 1/2 cup frozen Corn
  • 1/2 cup frozen Peas
  • 2 cups chopped Pineapple
  • 2 Tbs minced Garlic
  • 3 tsp Ginger powder
  • 4 Tbs Tamari Gluten Free Soy Sauce
  • 3 Tbs Sesame Oil
  • 1 tsp Pepper
  • 2 Tbs Coconut Oil

Instructions

  1. Cook rice according to package.
  2. In small bowl whisk together tamari, sesame oil, ginger powder, and pepper. Set aside.
  3. Heat large wok or saute pan over med-high heat, add coconut oil, sweet onion, peppers, and garlic.
  4. Saute 4-5 minutes until slightly softened and translucent.
  5. Add corn and peas, cook another 1-2 minutes.
  6. Add green onion, rice and pineapple, cook another 1-2 minutes.
  7. Add sauce, and cook another 1-2 minutes.
  8. Enjoy!
