Addicting Mango, Black Bean, and Cauliflower “Rice” Salad

Ingredients

Units Scale
  • 1 head of Cauliflower chopped and stems removed
  • 1 bunch about 4 or 5 stems of Green Onions chopped about 1/2 cup
  • 1 bunch of fresh Cilantro chopped and stems removed about 1/2 cup
  • 3 cloves of minced Garlic
  • 1/4 tsp Sea Salt
  • 1 Lime juiced
  • 1 can Black Beans drained and rinsed
  • 1 can Chickpeas drained and rinsed
  • 1/4 cup chopped Red Pepper
  • 2 Mangos peeled, cored, and chopped about 1 cup
  • 12 Grape Tomatoes

Instructions

  1. Wash and remove stem from Cauliflower.
  2. Chop Cauliflower in small chunks and add to food processor.
  3. Once Cauliflower is chopped into ‘rice’ like consistency add to microwave safe bowl.
  4. Microwave for 4 minutes and let cool before adding the rest.
  5. Add Green Onions, Cilantro, Garlic, and Salt.
  6. Squeeze the juice of the Lime over and stir.
  7. Add in Black Beans, Chickpeas, Red Pepper, Mangos, and Tomatoes.
  8. Mix together well and serve
  9. Enjoy!
