Bacon Wrapped Breakfast Burrito

Ingredients

  • 4 6 inch Soft Tortilla (I used gluten free)
  • 12 large Eggs
  • 1 cup shredded Mild Cheddar Cheese
  • 2024 slices Bacon
  • Non-stick cooking spray

Instructions

  1. In a medium skillet, spray with non-stick cooking spray and heat over medium heat
  2. In a small bowl add Eggs and whisk to scramble
  3. Pour Eggs into warm large skillet
  4. Cook 2-3 minutes gently stirring them every so often to create scrambled Eggs
  5. Divide and add scrambled Eggs to center of each Tortilla
  6. Sprinkle Cheese over Eggs
  7. Wrap each Tortilla up like a Burrito making sure the ends are closed
  8. On a cutting board add the 5-6 slices of Bacon in a single layer lining them up next to one another (make sure it’s as wide as your Burrito)
  9. Place the Burrito on top of the Bacon
  10. Carefully roll the Bacon around the Burrito
  11. Repeat for each burrito
  12. Place the Bacon Burrito in a skillet over med heat
  13. Cook each side 3-4 minutes or until all sides of the Bacon are cooked through
  14. Serve immediately
