Healthy Broccoli Bacon Salad with Greek Yogurt Dressing

Ok guys, I made a Healthy Broccoli Bacon Salad with Greek Yogurt Dressing the other day and did I mention it has BACON?! 

Ingredients

Units Scale
  • 1 head of Broccoli chopped into small pieces, about 4-5 cups
  • 1/3 cup finely chopped Red Onion
  • 1 cup halved Cherry Tomatoes
  • 1/4 cup dried Cranberries
  • 1/4 cup Almond Slivers
  • 1 cup cooked Bacon chopped, about 1/2 pound
  • 1 cup plain Greek Yogurt
  • 2 tsp Vinegar
  • 2 Tbs Honey

Instructions

  1. Cook bacon over medium heat, whiled cooking prepare salad.
  2. In large bowl add broccoli, onion, tomatoes, cranberries, almond slivers, and then bacon once done.
  3. In small bowl add greek yogurt, vinegar, and honey. Mix well.
  4. Add the yogurt mixture to the salad and stir well to coat everything.
  5. You can make this ahead of time and keep refrigerated.
  6. Enjoy!
