These Cheesy Quinoa Zucchini Fritters are super easy to make and loaded with so much goodness! I made a homemade Lemon Mayo Sauce that is perfect for dipping these into!

Ingredients

Units Scale

For the Zucchini Fritters:

  • 1/2 cup uncooked Quinoa
  • 1 cup Water
  • 3 Medium Zucchinis Grated
  • 2 Eggs
  • 4 Garlic Cloves Minced
  • 1 Tbs Dried Oregano
  • 1 cup Freshly Grated Parmesan Cheese
  • 1 cup Gluten Free Panko
  • 1/2 tsp + 1/2 tsp Sea Salt divided
  • 1/2 tsp Black Pepper
  • 34 Tbs EVOO

For the Lemon Mayo Sauce:

  • 1 Lemon Zested and Juiced
  • 3/4 cup Mayo
  • 1 Garlic Clove Minced
  • 1/2 tsp White Vinegar
  • 1 tsp Dijon Mustard
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Dried Thyme
  • Sea Salt and Pepper to taste

 

Instructions

  1. Add Quinoa and Water to a medium sauce pan and cook according to package directions
  2. While Quinoa is cooking prepare the rest
  3. Place grated Zucchini in a colander over the sink and sprinkle with 1/2 tsp Sea Salt, let it sit for 10 minutes
  4. Squeeze as much of the water out of the Zucchini as you can with your hands
  5. Then place the Zucchini on paper towels or a large dish cloth and squeeze the rest of the water out
  6. Place Zucchini in a large bowl, then add in Quinoa, Eggs, Garlic, Oregano, Parmesan, Panko, 1/2 tsp Sea Salt and Pepper
  7. Mix well
  8. Add EVOO to a large frying pan and heat over med/high heat
  9. Once oil is shimmering, form the Zucchini mixture into 2-3 inch patties and place in the frying pan
  10. Cook 4-5 minutes each side until crispy
  11. Place on paper towels once cooked to drain any additional oil
  12. Mix all ingredients for the Lemon Mayo Sauce and serve
  13. Enjoy!
