Creamy Beet Hummus made with simple fresh ingredients and has such an amazing flavor!

Ingredients

Units Scale
  • 2 small Beets
  • 1 15oz can Chickpeas drained and rinsed
  • 3 Tbs Tahini
  • 1 large Garlic Clove
  • 3 Tbs EVOO
  • 1/2 tsp ground Sea Salt
  • 1/4 tsp ground Black Pepper
  • 1/4 cup Water

Instructions

  1. *Beets can be roasted a day ahead of time and refrigerated before making the hummus.
  2. Preheat oven to 375 degrees Fahrenheit.
  3. Wash Beets and remove stems.
  4. Wrap up Beets individually in tin foil and place on a baking sheet.
  5. Roast in the oven for about 40 minutes until Beets can be pierced easily with a fork.
  6. Remove and let cool or refrigerate until ready to use.
  7. Place all ingredients in a food processor and pulse 30 seconds until smooth.
  8. Serve with your favorite veggies or chips.
  9. Enjoy!
