Creamy Chicken Sausage and Spinach Pasta

This Creamy Chicken Sausage and Spinach Pasta can be ready in less than 20 minutes! The sauce really makes this dish, it’s so luscious, creamy and dreamy! You may even want to drink this right out of the pan (although I don’t recommend that lol).

Ingredients

Units Scale
  • 12 oz Penne Pasta (I used DeLallo gluten free)
  • 1 Tbs Sea Salt for the Pasta water
  • 2 Tbs EVOO
  • 12 oz Hot Italian Chicken Sausage
  • 1 Sweet Onion Diced
  • 4 Cloves Minced Garlic
  • 1/4 cup White Cooking Wine
  • 1 cup Chicken Broth
  • 1/4 cup Heavy Whipping Cream
  • 5 oz Baby Spinach
  • 1/4 cup Parsley Chopped
  • 1 1/2 cups Shredded Parmesan
  • Sea Salt and Pepper to taste
  • Reserve 1 cup Pasta water after cooking the Pasta

Instructions

  1. Bring a large pot of water to a boil, add 1 Tbs Sea Salt and Penne, cook as directed on package or until al dente
  2. Reserve 1 cup of Pasta water and set aside after Pasta is cooked
  3. Add EVOO to a large skillet and heat over med/high heat
  4. When oil starts to shimmer, add Onion and Sausage
  5. Cook 5-8 minutes or until Sausage is cooked through and no longer pink
  6. Add Garlic and sauté 1 minute
  7. Add in White Wine and let reduce down a bit, about 1-2 minutes
  8. Stir in Chicken Broth and Heavy Cream, turn heat down and let simmer 1-2 minutes
  9. Add Spinach, Parsley, Parmesan, Penne, Sea Salt and Pepper
  10. Add in your desired amount of reserved pasta water (depending on how creamy you want it)
  11. Cook 1-2 minutes
  12. Serve immediately and enjoy!

Notes

I used fresh raw chicken sausage. You can use precooked chicken sausage, just cut the cooking time down to 1-2 minutes.
