Creamy Tuscan Salmon

This Creamy Tuscan Salmon will be your new favorite easy meal! Perfectly pan-seared salmon in a creamy parmesan sauce with garlic, sun-dried tomatoes, spinach and fresh parsley. You can have this restaurant quality meal on the table in about 30 minutes!

Ingredients

Units Scale
  • 4 Salmon fillets
  • Sea Salt
  • Pepper
  • 2 Tbs EVOO
  • 2 Tbs Butter
  • 6 Cloves Minced Garlic
  • 1/2 cup Chopped Sweet Onion
  • 5 oz Sun-dried Tomatoes in oil, drained of oil
  • 1/3 cup White Cooking Wine
  • 5 oz Baby Spinach
  • 16 oz Heavy Cream
  • 3/4 cup Shredded Parmesan
  • 2 Tbs Fresh Parsley Chopped

Instructions

  1. Sprinkle Salmon fillets with Sea Salt and Pepper
  2. In a large skillet add EVOO and heat over med/high heat
  3. When oil is shimmering add Salmon fillets flesh side down
  4. Cook for 5 minutes, flip the Salmon over and cook another 5 minutes or until it’s cooked through
  5. Remove Salmon from skillet and set aside
  6. Add Butter to skillet
  7. Once Butter is melted add Onion and sauté 1-2 minutes
  8. Add Garlic and sauté 1 minute
  9. Add Sun-dried Tomatoes and sauté 1-2 minutes so they release their flavors
  10. Add White Wine and let reduce down a bit
  11. Turn heat down to med/low until it’s a low simmer
  12. Add Spinach and Heavy Cream
  13. Cook at a low simmer so Cream doesn’t curdle and Spinach wilts down
  14. Add Parmesan and stir until melted in
  15. Add Salmon back to the skillet, sprinkle with Parsley and spoon sauce over Salmon
  16. Eat as is, serve with a baguette, serve over steamed veggies, rice or pasta
  17. Enjoy!
