Fall Harvest Salad with Goji Berries and Honey Apple Cider Vinaigrette

  • For the Salad:
  • 1 5oz package Baby Spinach
  • 5 oz Feta Cheese crumbles
  • ¾ cup Pecan halves
  • 1 Granny Smith Green Apple sliced and cored
  • 2 oz package Goji Berries
  • For the Dressing:
  • ¼ cup EVOO (extra virgin olive oil)
  • ¼ cup Apple Cider Vinegar
  • ¼ cup Honey
  • ¼ tsp Sea Salt
  • ¼ tsp Pepper
  1. In large salad bowl add Spinach and top with Feta, Pecans, Apple, and Goji Berries.
  2. In a small glass jar add EVOO, Apple Cider Vinegar, Honey, Salt, and Pepper.
  3. Put a lid on the jar and shake vigorously until blended.
  4. Pour dressing onto salad.
  5. Enjoy!
