Ginger Bok Choy Soup with Noodles

This Ginger Bok Choy Soup with Noodles is incredibly delicious and only takes about 15 minutes to make!


  • 3 Tbs EVOO
  • 1 small Sweet Onion chopped
  • 4 cloves Garlic chopped
  • 4 Tbs grated Ginger
  • 2 heads Bok Choy chopped, leaves and stems
  • 8 cups Vegetable Broth
  • 8oz Linguini Rice Noodles
  • 2 tsp Sesame Oil
  • 1 Tbs Tamari
  • Dash of Red Pepper Flakes
  • Salt and Pepper to taste


  1. In a 6 quart Dutch Oven add EVOO and heat over med/high heat
  2. When oil is shimmering add Onions and sauté 3-4 minutes
  3. Add Garlic, Ginger, and sauté 1 minute
  4. Add Bok Choy and sauté 1 minute
  5. Add Broth and bring to boil
  6. Add Noodles and turn heat down to simmer
  7. Add Sesame Oil, Tamari, Red Pepper Flakes, Salt, and Pepper
  8. Cook until noodles are done about 4-6 minutes
  9. Enjoy!
