Grilled Chili Lime Chicken Kabobs


  • 1 1/2 lbs Boneless Skinless Chicken Breasts cut into 1 inch chunks
  • 1 Red Bell Pepper cut into large chunks
  • 1 Yellow Bell Pepper cut into large chunks
  • 1 large Sweet Onion cut into large chunks
  • 1/2 cup Sherry
  • 1/2 cup EVOO
  • Juice from 3 Limes
  • 2 Tbs Chili Powder
  • 8 cloves minced Garlic
  • 1 tsp Sea Salt
  • 1 tsp Black Pepper
  • Dash of Red Pepper Flakes
  • 2 Limes sliced


  1. In a small bowl mix together Sherry, EVOO, Lime Juice, Chili Powder, Garlic, Salt, Pepper, and Red Pepper Flakes
  2. Add Chicken to a large ziplock bag and pour marinade over the Chicken
  3. Seal and lay bag flat so that all of the Chicken is covered by the marinade
  4. Refrigerate 2 hours
  5. Skewer the Chicken, Veggies, and Lime slices (alternating groups of Veggies between pieces of Chicken)
  6. Heat grill to medium heat around 425 degrees
  7. Place Kabobs on grill and cook 5 minutes each side or until Chicken is cooked all the way through
  8. Enjoy!
