Hot Chipotle Spinach Artichoke Dip

This Hot Chipotle Spinach Artichoke Dip has the perfect amount of spice and is oh so cheesy! This is absolutely a hit for any party or get together!

Ingredients

Scale
  • 1 Shallot
  • 2 Cloves Garlic
  • 23 Chipotle Peppers in Adobo Sauce
  • 1/2 cup shredded Parmesan
  • 2 cups shredded Mozzarella divided
  • 8 oz Cream Cheese softened
  • 1/2 cup Mayo
  • 1/2 tsp Sea Salt
  • 1/2 tsp Pepper
  • 1 14oz can Artichoke Hearts roughly chopped
  • 10 oz bag frozen Spinach thawed and water squeezed out

Instructions

  1. Preheat oven to 400 degrees F
  2. Add Shallot, Garlic and Chipotle Peppers to a small food processor and pulse until finely chopped
  3. Add the mixture to a large bowl along with 1 cup of Mozzarella, Parmesan, Cream Cheese, Mayo, Salt, Pepper, Artichokes and Spinach
  4. Mix well and spread out on a pie or oven safe dish
  5. Spread the other cup of Mozzarella Cheese over the top
  6. Bake 20-25 minutes until cheese starts to brown on top and is nice and bubbly
  7. Serve with chips, pita, bread etc.
  8. Enjoy!

Notes

If you find it’s too spicy just cut back on the Chipotle Peppers. If you want to kick it up then feel free to add more Chipotle Peppers!
