Instant Pot Lentil and Black Bean Chili

This Instant Pot Lentil and Black Bean Chili couldn’t be any easier to make! It’s hearty, filling, and has so much flavor. It’s definitely a family favorite in our house!

Ingredients

  • 5 cups Vegetable Broth
  • 1 1/2 cups of dry Green Lentils
  • 1 14.5oz can diced Tomatoes with fire roasted green chilis
  • 1 15oz can Tomato Sauce
  • 2 14oz cans of Black Beans drained and rinsed
  • 1 large Sweet Onion chopped
  • 1 large Red Pepper chopped
  • 4 cloves finely chopped Garlic
  • 1 Tbs Olive Oil
  • 1 cup frozen Corn
  • 1 Tbs Chili Powder
  • 1 tsp Cumin
  • 1 tsp Truvia Brown Sugar

Instructions

  1. Turn on Instant Pot to sauté mode
  2. Add Olive oil
  3. Once oil starts to shimmer, add Onion, Red Pepper and sauté 3-4 minutes
  4. Add Garlic and sauté 1 minute
  5. Press the cancel button to turn Instant Pot off
  6. Add Vegetable Broth, Lentils, Tomatoes, Tomato Sauce, Black Beans, Corn, Chili Powder, Cumin, and Brown Sugar
  7. Place lid on Instant Pot and make sure lid and vent is sealed
  8. Set to pressure cook on high for 12 minutes
  9. Let it slowly release pressure for 15 minutes, then press valve to release all the way
  10. Serve with your favorite chili toppings and enjoy!

Notes

It takes roughly 10 minutes for the Instant Pot to build up pressure before the cooking timer starts.
