Instant Pot Shrimp Boil

This Instant Pot Shrimp Boil is super easy to make and cooks in a fraction of the time that a regular Shrimp Boil would take! If you love seafood and your Instant Pot, this is definitely a must try recipe!

Ingredients

  • 1 Red Onion chopped
  • 5 Cloves Garlic quartered or halved depending on size
  • 1 1/2 lbs Baby Red Potatoes
  • 1 lb Andouille Sausage chopped into 1 inch pieces
  • 3 Ears of Corn cut into thirds
  • 1 lb Frozen Jumbo Shrimp
  • 1 Tbs Old Bay Seasoning
  • 2 Lemons cut into wedges and divided
  • 3 cups Vegetable Broth
  • Chives for garnish
  • 1/4 cup melted Butter

Instructions

  1. Layer everything in a 6 quart Instant Pot in this order – Onion, Garlic, Potatoes, Sausage, Corn, and Shrimp
  2. Squeeze the wedges from one of the Lemons over the Shrimp and place the wedges in the Instant Pot
  3. Sprinkle Old Bay over the Shrimp
  4. Pour Vegetable Broth over everything
  5. Place lid on Instant Pot, set the valve to sealing position, and set pressure cook on high for 5 minutes
  6. Note it will take around 20 minutes for it to come to pressure
  7. When timer goes off release the steam valve
  8. Once all the steam is released and the pin is dropped open lid
  9. Remove everything with a slotted spoon and place on a platter
  10. Squeeze remaining Lemon wedges over everything
  11. Drizzle the melted Butter over everything and add more Old Bay Seasoning if you want more spice
  12. Garnish with Chives
  13. Enjoy!

Notes

If you are using fresh Shrimp then do not put it in right away. Cook everything else as instructed first. Add to the Instant Pot, seal and cook on high pressure for 1 more minute. Release the steam valve and wait for pin to drop before opening lid.
