Ok guys I made these Paleo Blueberry Muffins today and guess what…they are Sugar Free!!! As in NO sugar added, not even fake sugar.
Gross does anyone still use fake suger?! Like as in the little pink packets that cause Cancer?! If you’re still using that stuff from the 80s, PLEASE STOP!) My mom died of cancer in the late 80s, so I still get SUPER upset that food companies out there in the US can still have harmful ingredients that can cause Cancer and who knows what else… OK…done with my rant, time to focus on goodness!
These little blueberry muffin delights are now a part of my morning breakfast for the next 12, 6, errr-ummm 3 days…OK, Ok, YES I eat more than one muffin for breakfast! Darn those serving size rules! 😛
So I’m also super excited about this post because I just got back from Bealls Outlet, which is like THE greatest store ever in Florida! I’m not sure if they have these stores anywhere else, but they should!!!
Well, while I was out shopping the Bealls Outlet Clearance section for some new food photography props, I came across this blue wooden tray.
I thought, Wow, this is soooo cool! Wait how am I going to utilize this everyday since I’m now a minimalist?! Oh wait! I can use it for a prop for my food blog! YES!!! Win-Win! 🙂
And honestly I had already planned on making my Paleo Blueberry Muffins this week. So it didn’t hit me until after I got home that, BAM! (YES, I love using Emerils catch phrase BAM!) I can use this tray for my Paleo Blueberry Muffin post!
SERIOUSLY, the Universe must be talking to me and pointing me in the right direction, cause days like this I just wonder…

Ingredients
- 2 1/2 cups Almond Flour
- 3/4 tsp Baking Soda
- 1/2 tsp Sea Salt
- 3 Eggs
- 1/3 cup Unsweetened Apple Sauce
- 2 Tbs Honey
- 2 Tbs Coconut Oil melted
- 1 tsp White Vinegar
- 1 tsp Vanilla Extract
- 1 cup Fresh Blueberries
- non-stick cooking spray
Instructions
- Preheat oven to 350 degrees.
- Spray 12 cup muffin pan with non-stick cooking spray.
- In large bowl add Almond Flour, baking soda, and salt.
- Mix well.
- In medium bowl add eggs, applesauce, honey, coconut oil, vinegar, and vanilla.
- Mix well.
- Add the wet ingredients to the dry ingredients and mix well.
- Fold in Blueberries.
- Add mix to muffin tin.
- Bake 18 minutes.
- Let cool in pan for 10 minutes before serving.
- Makes 12 muffins.
- Enjoy!
