Quinoa Fajita Bowls



  1. Cook Quinoa as directed on package
  2. Once Quinoa is cooked add Lime Juice and Cilantro, stir well
  3. Add EVOO to a large skillet and heat over med/high heat
  4. When oil is warm add Peppers and Onions, sauté 5 minutes until veggies have softened a bit
  5. In a small bowl mix together Chili Powder, Paprika, Garlic Powder, Cumin, Oregano, Salt, and Pepper
  6. Pour seasoning over Peppers, add water, and stir for 2-3 minutes
  7. Heat Black Beans in a microwave safe bowl for 1-2 minutes
  8. Prepare your bowls
  9. Add desired amount of Quinoa, Peppers, Beans, Tomatoes, Lettuce, Avocado
  10. Squeeze more Lime Juice over and add Cilantro if desired
  11. Enjoy!
