Roasted Whipped Parsnips

These Roasted Whipped Parsnips are the perfect side dish when you want to replace your mashed potatoes. They roasted first, then whipped to creamy perfection!


  • 2 1/2 lbs Parsnips chopped into 1 inch pieces
  • 1 Whole bulb of Garlic peeled (about 10 cloves)
  • 1/4 cup + 2 Tbs EVOO divided
  • 1/4 cup Cashew milk or milk of your choice
  • 23 Tbs freshly chopped Chives
  • Sea Salt and Pepper to taste
  • Cooking spray


  1. Preheat oven to 400 degrees Fahrenheit
  2. Spray a large sheet pan with cooking spray
  3. Add Parsnips and Garlic
  4. Drizzle 2 Tbs EVOO over everything
  5. Sprinkle Sea Salt and Pepper over Parsnips
  6. Roast in the oven 30 minutes or until a fork pierces easily through the thickest part of the Parsnips
  7. Place Parsnips and Garlic in a food processor or high speed blender (you may need to work this in batches depending on the size of your food processor)
  8. Add 1/4 cup EVOO, Cashew Milk, and Chives
  9. Blend until creamy (like mashed potato consistency), you may need to add more EVOO or Milk depending on how creamy you want these
  10. Taste and add more Salt or Pepper if needed
  11. Top with additional Chives if desired
  12. Enjoy!
