Sausage and Kale Soup with Arborio Rice

Ingredients

  • 1 cup RiceSelect Arborio Rice
  • 1 lb Sweet Italian Style Turkey Sausage chopped into 1 inch size pieces
  • 6 cups Chicken Broth
  • 4 Tbs EVOO divided
  • 1 cup chopped Carrots
  • 1 cup chopped Sweet Onion
  • 2 cloves chopped Garlic
  • 1 Tbs fresh Thyme
  • 2 Bay Leaves
  • 3 cups chopped Kale leaves stems removed
  • 1 tsp Sea Salt
  • 1/2 tsp Black Pepper

Instructions

  1. In 6 qt Dutch Oven add 2 Tbs EVOO and heat over med/high heat
  2. When oil is shimmering add Turkey Sausage and cook 5-7 minutes or until cooked all the way through
  3. Remove Turkey and set aside
  4. Add 2 Tbs EVOO to Dutch Oven
  5. Add Carrots, Onion, Garlic, and Thyme
  6. Sauté 3-4 minutes until slightly softened
  7. Add Chicken Broth, RiceSelect® Arborio Rice, Bay Leaves, Salt, and Pepper
  8. Bring to a simmer and cover most of the way with a lid
  9. Simmer 10 minutes stirring occasionally
  10. Remove Bay Leaves and discard
  11. Add Turkey Sausage and Kale
  12. Cook with the lid partially on 5 minutes stirring occasionally until rice is fully cooked
  13. Serve and enjoy!

Notes

If rice absorbs too much liquid add more broth to the soup and reheat.
