Skillet Cilantro Lime Chicken Thighs

  • 4 Chicken Thighs bone in skin on
  • 2 Shallots finely chopped
  • 4 clove minced Garlic
  • Juice from 2 Limes
  • 1 small bunch fresh Cilantro
  • 2 Tbs Olive Oil
  • 1/2 cup Cooking White Wine
  • 1 cup Vegetable Broth
  • Ground Pink Himalayan Salt
  • Ground Peppercorn
  • Paprika

Instructions

  1. Preheat oven to 375 degrees.
  2. In 9 inch cast iron skillet add Olive Oil and Chicken Thighs skin side up.
  3. Sprinkle a few pinches of salt, pepper, and paprika over the top of the chicken.
  4. Heat chicken over med-high heat on stove top for 4 minutes on each side.
  5. Remove chicken from pan and place on a plate with paper towels to absorb grease.
  6. Add white wine, garlic, and shallots to pan cooking 2-3 minutes until wine reduces.
  7. Add vegetable broth and lime juice.
  8. Bring to a boil and remove from heat.
  9. Add Chicken back to pan and place cilantro over the top.
  10. Bake in the oven uncovered 30 minutes until chicken is no longer pink.
  11. Enjoy!
