This Spicy Sausage and White Bean Soup with Spinach is super easy to make, hearty, and so flavorful! Just add everything to a Slow Cooker and dinner will be waiting for you when you come home at night!

Ingredients

Scale
  • 6 cups Chicken Broth
  • 12oz Andouille Sausages sliced thin
  • 2 15oz cans of Cannellini Beans drained
  • 3 Celery stalks chopped
  • 3 Carrots chopped
  • 1 large Sweet Onion chopped
  • 3 cloves Garlic finely chopped
  • 1 Tbs dried Parsley
  • 1 tsp dried Oregano
  • 3 tsp Sea Salt
  • 3 tsp Black Pepper
  • 5 oz fresh Spinach

Instructions

  1. Add all ingredients except Spinach into the Slow Cooker
  2. Cover and cook on low for 6 hours
  3. Add in Spinach, cover and cook additional 30 minutes
  4. Taste and add more salt or pepper to your liking
  5. Enjoy!
