Spicy Shrimp Tacos with Avocado Cilantro Sauce

Ingredients

  • 16 medium Shrimp peeled and deveined
  • 1/4 tsp Garlic Powder
  • 1/2 tsp Chili Powder
  • 1/8 tsp Cayenne Pepper
  • 4 Tbs Avocado Oil divided
  • 2 ripe Avocadoes pitted and skin removed
  • 1 clove Garlic
  • 1/4 cup fresh Cilantro
  • Juice from 2 1/2 Limes
  • 1/2 tsp Sea Salt
  • 1/2 tsp Black Pepper

Instructions

  1. Add 2 Tbs Avocado Oil, Avocados, Garlic, Cilantro, Lime Juice, Salt, and Pepper to a food processor and blend until smooth
  2. Set aside
  3. In a medium frying pan add 2 Tbs Avocado Oil and heat over med/high heat
  4. Add Shrimp and sprinkle Garlic Powder, Chili Powder, and Cayenne Pepper evenly over Shrimp
  5. Cook 3-4 minutes until Shrimp are cooked all the way through
  6. Add Shrimp to taco shells of choice (I used gluten free tortillas)
  7. Top with Avocado Cilantro Sauce
  8. Additional toppings I used were Red Cabbage, Lettuce, and Tomatoes
