Tuna Salad with Lemon Carrots and Spiralized Cucumber

Ingredients

  • 1 small Organic Cucumber
  • 1/2 cup Shredded Organic Carrots
  • 1 4oz can Tuna drained
  • 1 Tbs fresh Lemon Juice
  • 1 Tbs EVOO (extra virgin olive oil)
  • Sea Salt and Pepper to taste

Instructions

  1. Spiralize Cucumber using the smallest blade setting on your spiralizer (cut some of the strands to make more bite size pieces)
  2. Add to a bowl
  3. Add in Carrots and Tuna
  4. In a small bowl whisk together Lemon Juice, EVOO, Salt, and Pepper
  5. Pour over salad and mix well
  6. Serve immediately
  7. Enjoy!
