Vegetarian Zucchini Noodle Pad Thai

This Vegetarian Zucchini Noodle Pad Thai is hearty, healthy, and can be made in under 30 minutes!




  1. Have all ingredients chopped and ready to go, once you have everything prepped it cooks fast
  2. In a small sauce pan add Fish Sauce, Sugar, and Chili Sauce
  3. Place sauce pan on stove and heat over low setting, let it sit on warm stirring occasionally until ready to use
  4. Heat a large wok over med-high heat with 2 Tbs Mazola Corn Oil
  5. When oil starts to shimmer add Garlic, Shallots, and Green Onions
  6. Sauté 2-3 minutes
  7. Add in Cabbage, Carrots, Red Pepper, and Zucchini noodles
  8. Sauté 2-3 minutes until everything is slightly softened (don’t over cook or they will get soggy)
  9. Add in the sauce that was set aside previously
  10. Sauté 1-2 minutes
  11. Stir in Cilantro and Lime Juice, remove from heat
  12. Top with Cashews and serve immediately
  13. Enjoy!
