No Bake White Chocolate Pumpkin Bites

No Bake White Chocolate Pumpkin Bites that are Gluten Free and so yummy! 


Units Scale
  • 10 pitted Medjool Dates
  • 1/4 cup Pumpkin Puree
  • 1/2 cup Almond Butter
  • 1/2 tsp Vanilla Extract
  • 1/4 cup Unsweetened Vanilla Coconut Milk, I used So Delicious brand
  • 2 tsp Pumpkin Pie Spice
  • 1/2 tsp Cinnamon
  • 1/4 cup Coconut Flour
  • 1/2 cup White Chocolate Chips


  1. In food processor add all ingredients except Coconut Flour and White Chocolate Chips.
  2. Pulse until smooth, 30 seconds to 1 minute. You may have to stop a few times to scrape down the sides.
  3. Add Coconut Flour and pulse 10 seconds until flour is blended in.
  4. Remove batter from food processor and place in a medium bowl.
  5. Add in White Chocolate Chips and stir until mixed.
  6. Take a small scooper or just grab a small amount of batter and roll it in your hands to create 1-2 inch size balls.
  7. Place on a cookie sheet.
  8. Refrigerate at least 30 minutes.
  9. Makes about 15 bite size pieces.
  10. Enjoy!
  11. Store in air tight container in fridge for up to 5 days.
