Baked Coconut Shrimp with Spicy Mayo Dipping Sauce

  1. Preheat oven to 400 degrees.
  2. Rinse and pat dry shrimp.
  3. In small bowl whisk egg.
  4. In large plate add panko, and coconut flakes, stir together.
  5. Place a sheet of parchment paper over a baking pan.
  6. Dip shrimp into egg and coat well.
  7. Dip shrimp into panko mixture and coat all sides well.
  8. Place shrimp on top of parchment paper.
  9. Bake 20 minutes.
  10. Enjoy!
