Let’s hear it for the Coconut lovers! This Gluten Free Coconut Shrimp with Spicy Mayo Dipping Sauce are so delicious, you’ll think you are in the Caribbean while eating this! 


Units Scale

For the Coconut Shrimp

  • 1/2 lb large Shrimp peeled and deveined
  • 1 cup Gluten Free Panko
  • 1/2 cup Sweetened Coconut Flakes
  • 1 Egg

For the Spicy Mayo

  • 1/2 cup Mayo
  • 1 1/2 tsp Chili Garlic Sauce
  • 1 tsp Lemon Juice
  • Dash of Onion Powder


  1. Preheat oven to 400 degrees.
  2. Rinse and pat dry shrimp.
  3. In small bowl whisk egg.
  4. In large plate add panko, and coconut flakes, stir together.
  5. Place a sheet of parchment paper over a baking pan.
  6. Dip shrimp into egg and coat well.
  7. Dip shrimp into panko mixture and coat all sides well.
  8. Place shrimp on top of parchment paper.
  9. Bake 20 minutes.
  10. Mix together ingredients for the Spicy Mayo and serve with the Shrimp
  11. Enjoy!
