Caribbean Fish Tacos

  • For the Fish Tacos:
  • 1 pound fresh Tuna Steaks (about 2 steaks)
  • 1 small Lime juiced
  • 1 Tbs Chili Powder
  • 1/4 tsp Caribbean Jerk seasoning
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1 1/2 tsp Cumin
  • 1 Tbs Coconut Oil
  • 1 clove minced Garlic
  • For the Guacamole:
  • 2 Avocados mashed
  • 1/4 cup Greek Yogurt
  • 1 small Lime juiced
  • 1 clove minced Garlic
  • 2 heaping Tbs fresh chopped Cilantro
  • 1 Tbs fresh chopped Basil
  • Salt and Pepper to taste
  • For the Slaw:
  • 2 cups finely chopped Red Cabbage
  • 2 Green Onions chopped (green parts only)

Instructions

  1. Place tuna steaks in a large glass pan.
  2. Squeeze the juice of 1 lime evenly over tuna.
  3. Sprinkle seasoning evenly over both sides of fish.
  4. Let it marinate for up to 30 minutes.
  5. While the fish is marinating, make the Guacamole, and the slaw.
  6. For the Guacamole:
  7. Slice 2 Avocados in half and remove pit.
  8. Scoop Avocado into small bowl and mash until your desired texture.
  9. Add greek yogurt and mix well.
  10. Squeeze juice of lime into mixture.
  11. Add garlic, cilantro, basil, salt and pepper.
  12. Mix well.
  13. For the Fish Tacos:
  14. Once fish is marinated, chop tuna steaks into 1 inch pieces.
  15. In large frying pan over medium high heat add coconut oil until melted over bottom of pan.
  16. Add tuna and fry evenly until slightly pink in center (about 5-8 minutes).
  17. Add cooked tuna to corn tortillas, top with Guacamole, slaw, and toppings of your choice
  18. Enjoy!
