Chickpea Salad Sandwich

This Chickpea Salad Sandwich is loaded with flavor! It’s also full of protein and makes for a healthy nutritious lunch.


  • 1 15oz can Chickpeas drained and rinsed
  • 1/4 cup finely chopped Red Onion
  • 1 Tbs Dijon Mustard
  • 1/4 cup Mayo
  • 1 Tbs dried Tarragon Leaves
  • Sea Salt and Pepper to taste


  1. Add Chickpeas to a shallow dish and mash with a potato masher
  2. Mash to your desired texture, I like to leave a few whole
  3. Add Onion, Mustard, Mayo, Tarragon, Salt, and Pepper
  4. Mix well, taste and add more Salt or Pepper to your liking
  5. Makes 3-4 sandwiches depending on the size of your bread
  6. Enjoy!
