Easy Roasted Red Pepper Hummus

Ingredients

  • 2 Red Peppers, cored and sliced into strips
  • 1 clove Garlic
  • 3 Tbs EVOO
  • 1 15oz can Chickpeas
  • 3 Tbs Tahini
  • Dash of Sea Salt
  • 1/2 tsp Cumin
  • Juice from 1 small lemon
  • Dash of Red Pepper Flakes

Instructions

  1. Preheat oven to 450 degrees.
  2. Line a baking sheet with parchment paper.
  3. Add Red Pepper and Garlic to pan.
  4. Drizzle 1 Tbs EVOO over peppers.
  5. Bake 20 minutes until peppers are soft and have a little black around the edges.
  6. Let peppers cool 5-10 minutes.
  7. Reserve a few peppers for garnish.
  8. In food processor add Chickpeas, Red Peppers, Garlic, Tahini, Sea Salt, Cumin, Lemon Juice.
  9. Pulse for 30 seconds.
  10. Slowly add 1-2 more Tbs EVOO until desired consistency.
  11. Add Red Pepper flakes and pulse 30 seconds more.
  12. Taste and add more Red Pepper Flakes if you want it spicier.
  13. Enjoy!
