Instant Pot Shrimp Paella

This Instant Pot Shrimp Paella is super easy to make and loaded with flavor! This easy dinner can be on your table in less than 30 minutes!

Ingredients

Units Scale
  • 4 Tbs EVOO
  • 4 Garlic cloves minced
  • 1 Sweet Onion chopped
  • 1 Red Bell Pepper diced
  • 1 tsp Smoked Paprika
  • 1 tsp Ground Turmeric
  • Pinch of Saffron threads
  • 1/2 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • Dash of Red Pepper Flakes
  • 1 cup Jasmati or other long grain rice
  • 1/2 cup White Cooking Wine
  • 1 cup Vegetable Broth
  • 30 oz Fire Roasted Diced Tomatoes
  • 12 oz Andouille Sausage sliced into bite size pieces
  • 1/2 lb Frozen Jumbo Shrimp

Instructions

  1. Add EVOO to Instant Pot and turn on to sauté mode
  2. When oil start to shimmer add Garlic, Onion and Pepper
  3. Saute 2 minutes
  4. Add in Paprika, Turmeric, Saffron, Salt, Pepper, and Red Pepper Flakes
  5. Stir for 1 minute
  6. Add Cooking Wine to deglaze for about 1 minute
  7. Press cancel on the Instant Pot and let the liquid cool until no longer bubbly, 2-3 minutes
  8. Add Sausage, Shrimp, Tomatoes, and Rice
  9. Pour Broth over everything
  10. Cover and cook on high pressure for 8 minutes

Notes

Add everything to Instant Pot in the order it is listed and make sure Rice is on top of everything to prevent it from sticking to the bottom and burning.

It takes approximately 10 minutes for the Instant Pot to come to pressure before cook time starts.
