Lemon Paprika Chicken Thighs

These Lemon Paprika Chicken Thighs are Low Carb, super delicious and can be made in about 30 Minutes! This will be your new favorite weeknight meal!

Ingredients

Units Scale
  • 4 Chicken thighs, bone in skin on
  • 4 Cloves Garlic minced
  • 2 tsp Paprika
  • 1 tsp Thyme
  • 2 Tbs Lemon Juice
  • 1 cup White Wine
  • 2 Tbs Coconut Oil
  • Sea Salt and Pepper to taste

Instructions

  1. In medium bowl whisk together white wine, garlic, paprika, thyme, lemon juice, salt and pepper.
  2. Add chicken to large ziplock bag.
  3. Pour mixture over chicken and seal bag.
  4. Marinade 4 hours in the fridge (you can do less, but flavor is better the longer it marinades).
  5. Once marinaded, add coconut oil to large skillet and heat on medium.
  6. Add chicken skin side down and cook 6 minutes each side.
  7. Remove chicken from pan and place on paper towels to drain grease.
  8. Remove excess grease from pan.
  9. Add marinade sauce that the chicken was in to the pan.
  10. Add chicken back to pan and cover cooking over medium-low heat.
  11. Cook about 20 minutes, turning half way through.
  12. Remove chicken from pan and serve.
  13. Enjoy!
