Smoked Salmon Avocado Dill Crostini

Ingredients

  • 1 Baguette (I used gluten free)
  • 1 small clove Garlic
  • 1/2 cup fresh Italian Parsley
  • 1/2 cup fresh Dill Weed
  • 1 Avocado
  • 2 Tbs Lemon Juice
  • 1/4 tsp Sea Salt
  • 1/4 cup EVOO (extra virgin olive oil)
  • 35 oz Smoked Salmon

Instructions

  1. Preheat oven to 425 degrees
  2. Slice Baguette 1-2 inches thick (or to your preference)
  3. Place on a baking sheet, bake 4 minutes each side until desired crispiness
  4. Add Garlic, Parsley, Dill, Avocado, Lemon Juice, Salt, and EVOO to food processor
  5. Blend 15-30 seconds until smooth
  6. Spread over crostini, top with Salmon, and garnish with extra Dill
  7. Enjoy!
