Heat 12 inch cast iron skillet over med/high heat
Add 1 Tbs Cooking Oil
When oil starts to shimmer add Pork
Sauté 8-10 minutes or until Pork is cooked all the way through
Remove Pork and set aside
Add 1 Tbs oil to skillet
Add Peppers and Onions, sauté 5-6 minutes until slightly softened
Add Spinach and sauté 1-2 minutes
In a small bowl whisk together Eggs
Create a hole in the middle of the skillet by moving the Peppers and Onions aside
Pour Eggs into the hole, cook them 1-2 minutes until scrambled
Add Pork back into skillet, mix well and remove from heat
Serve and enjoy!
