This Blackened Shrimp Cobb Salad is loaded with so much flavor. It's topped with a homemade Creamy Lemon Dressing that is super easy to make and makes this dish so savory!

For the Blackened Seasoning:

ground Smoked Paprika

teaspoon
ground Cayenne

Garlic Powder

Onion Powder

dried Oregano

Sea Salt

Black Pepper
For the Salad:
½
lb
Fresh or Frozen Large Shrimp

Heads Romain Lettuce chopped

Hard Boiled Eggs chopped

Pint
Cherry or Grape Tomatoes

English Cucumber sliced

Avocados chopped

of a Red Onion sliced into thin half moon strips

of Thick Cut Bacon
Feta Cheese
For the Dressing:

Lemon Zested and Juiced
1
Garlic clove minced

White Vinegar

EVOO

Mayo
Sea Salt and Pepper to taste
Instructions
Mix together all ingredients for the Blackened Seasoning and set aside
In a large skillet add Bacon and cook over medium heat until desired doneness
Remove Bacon and place on paper towels to absorb the grease, once cooked chop into pieces
Peel and devein Shrimp, if you are using frozen Shrimp make sure they are thawed before starting
Pat Shrimp dry with a paper towel
Sprinkle enough Blackened Seasoning to coat all sides of the Shrimp, you will have plenty leftover, see notes for storing
In the same skillet with the bacon grease, heat over med/high and cook the Shrimp 3-4 minutes or until done, set aside
To a large platter or bowl add Lettuce, Eggs, Tomatoes, Cucumber, Avocados, Red Onion, Bacon and sprinkle with desired amount of Feta Cheese
Add the ingredients for the dressing to a small bowl and whisk until smooth
Pour dressing over salad and mix well
Enjoy!
Notes
Store leftover Blackened Seasoning in an air tight container in your spice cupboard.
