This Chickpea Salad Sandwich is loaded with flavor! It's also full of protein and makes for a healthy nutritious lunch.

Ingredients
  

  • 1 15 oz can Chickpeas drained and rinsed
  • ¼ cup finely chopped Red Onion
  • 1 Tbs Dijon Mustard
  • ¼ cup Mayo
  • 1 Tbs dried Tarragon Leaves
  • Sea Salt and Pepper to taste

Instructions
 

  • Add Chickpeas to a shallow dish and mash with a potato masher
  • Mash to your desired texture, I like to leave a few whole
  • Add Onion, Mustard, Mayo, Tarragon, Salt, and Pepper
  • Mix well, taste and add more Salt or Pepper to your liking
  • Makes 3-4 sandwiches depending on the size of your bread
  • Enjoy!
