This Chickpea Salad Sandwich is loaded with flavor! It's also full of protein and makes for a healthy nutritious lunch.

- 1 15 oz can Chickpeas drained and rinsed
- ¼ cup finely chopped Red Onion
- 1 Tbs Dijon Mustard
- ¼ cup Mayo
- 1 Tbs dried Tarragon Leaves
- Sea Salt and Pepper to taste
Add Chickpeas to a shallow dish and mash with a potato masher
Mash to your desired texture, I like to leave a few whole
Add Onion, Mustard, Mayo, Tarragon, Salt, and Pepper
Mix well, taste and add more Salt or Pepper to your liking
Makes 3-4 sandwiches depending on the size of your bread
