Creamy Lemon Asparagus Spaghetti

This Creamy Lemon Asparagus Spaghetti comes together in less than 30 minutes including prep time! The flavors of everything come together perfectly, creating a taste explosion with every bite!

Ingredients
  

  • 6 oz Spaghetti I used Delallo gluten free spaghetti
  • 1 bunch Asparagus chopped into 1 inch pieces (discard the woody thick bottom part)
  • 4 Tbs EVOO divided
  • 1 Small Sweet Onion chopped
  • 3 Cloves Minced Garlic
  • 1/2 Cup Heavy Cream
  • 1 cup White Cooking Wine
  • 1 Lemon Zested and Juiced
  • 1/2 Cup Freshly Grated Parmesan + more for topping
  • 1/4 Cup Fresh Parsley Chopped
  • Sea Salt and Pepper to taste

Instructions
 

  • Cook Spaghetti as directed on package until al dente
  • While pasta is cooking add 2 Tbs EVOO to a large skillet and heat over med/high heat
  • When oil is shimmering add Asparagus and sprinkle a little Sea Salt and Pepper over it
  • Cook until crispy, 5-6 minutes then remove from skillet and set aside
  • Add 2 Tbs EVOO and Onions to skillet, sauté 3-4 minutes
  • Add Garlic and sauté 1 minute
  • Add Heavy Cream, Wine, Lemon Zest and Juice
  • Bring to a boil then turn the heat down and let it simmer for 5 minutes
  • Add Spaghetti, Asparagus, Parsley, Parmesan and stir until creamy
  • Season with Sea Salt and Pepper to your taste
  • Top with more Parmesan for serving
  • Enjoy!
