This Creamy Tuscan Salmon will be your new favorite easy meal! Perfectly pan-seared salmon in a creamy parmesan sauce with garlic, sun-dried tomatoes, spinach and fresh parsley. You can have this restaurant quality meal on the table in about 30 minutes!

- 4 Salmon fillets
- Sea Salt
- Pepper
- 2 Tbs EVOO
- 2 Tbs Butter
- 6 Cloves Minced Garlic
- 1/2 cup Chopped Sweet Onion
- 5 oz Sun-dried Tomatoes in oil drained of oil
- 1/3 cup White Cooking Wine
- 5 oz Baby Spinach
- 16 oz Heavy Cream
- 3/4 cup Shredded Parmesan
- 2 Tbs Fresh Parsley Chopped
Sprinkle Salmon fillets with Sea Salt and Pepper
In a large skillet add EVOO and heat over med/high heat
When oil is shimmering add Salmon fillets flesh side down
Cook for 5 minutes, flip the Salmon over and cook another 5 minutes or until it's cooked through
Remove Salmon from skillet and set aside
Add Butter to skillet
Once Butter is melted add Onion and sauté 1-2 minutes
Add Garlic and sauté 1 minute
Add Sun-dried Tomatoes and sauté 1-2 minutes so they release their flavors
Add White Wine and let reduce down a bit
Turn heat down to med/low until it's a low simmer
Add Spinach and Heavy Cream
Cook at a low simmer so Cream doesn't curdle and Spinach wilts down
Add Parmesan and stir until melted in
Add Salmon back to the skillet, sprinkle with Parsley and spoon sauce over Salmon
Eat as is, serve with a baguette, serve over steamed veggies, rice or pasta
