Creamy Tuscan Salmon

This Creamy Tuscan Salmon will be your new favorite easy meal! Perfectly pan-seared salmon in a creamy parmesan sauce with garlic, sun-dried tomatoes, spinach and fresh parsley. You can have this restaurant quality meal on the table in about 30 minutes!

Ingredients
  

  • 4 Salmon fillets
  • Sea Salt
  • Pepper
  • 2 Tbs EVOO
  • 2 Tbs Butter
  • 6 Cloves Minced Garlic
  • 1/2 cup Chopped Sweet Onion
  • 5 oz Sun-dried Tomatoes in oil drained of oil
  • 1/3 cup White Cooking Wine
  • 5 oz Baby Spinach
  • 16 oz Heavy Cream
  • 3/4 cup Shredded Parmesan
  • 2 Tbs Fresh Parsley Chopped

Instructions
 

  • Sprinkle Salmon fillets with Sea Salt and Pepper
  • In a large skillet add EVOO and heat over med/high heat
  • When oil is shimmering add Salmon fillets flesh side down
  • Cook for 5 minutes, flip the Salmon over and cook another 5 minutes or until it's cooked through
  • Remove Salmon from skillet and set aside
  • Add Butter to skillet
  • Once Butter is melted add Onion and sauté 1-2 minutes
  • Add Garlic and sauté 1 minute
  • Add Sun-dried Tomatoes and sauté 1-2 minutes so they release their flavors
  • Add White Wine and let reduce down a bit
  • Turn heat down to med/low until it's a low simmer
  • Add Spinach and Heavy Cream
  • Cook at a low simmer so Cream doesn't curdle and Spinach wilts down
  • Add Parmesan and stir until melted in
  • Add Salmon back to the skillet, sprinkle with Parsley and spoon sauce over Salmon
  • Eat as is, serve with a baguette, serve over steamed veggies, rice or pasta
  • Enjoy!
