hese Easy Rosemary Potatoes Baked in Foil have to seriously be one of THE easiest side dishes I've ever made. You can bake these in the oven or put them on the grill, and do you know what the best part is? NO CLEANUP!

- 1 lb chopped baby Yukon Gold Potatoes
- 1 medium Sweet Onion chopped
- 4 cloves minced Garlic
- 2 fresh sprigs of Rosemary stems removed
- 1/2 tsp ground Pink Himalayan Salt
- 1/2 tsp ground Peppercorn
- 3 Tbs Olive Oil
- Non-stick cooking spray
Preheat oven to 400 degrees.
Add 2 large sheets of tin foil criss crossing each other on top of a baking sheet.
Spray with non-stick cooking spray.
Add potatoes, onion, and garlic.
Sprinkle salt and pepper evenly over top.
Add Rosemary evenly over top.
Drizzle Olive Oil evenly over everything.
Wrap up foil.
Bake 25 - 30 minutes until potatoes are soft when pierced with a fork.
