I decided to kick off the start of fall with this Fall Harvest Salad with Goji Berries and Honey Apple Cider Vinaigrette. It's so easy, healthy and delicious!

For the Salad:
- 1 5 oz package Baby Spinach
- 5 oz Feta Cheese crumbles
- ¾ cup Pecan halves
- 1 Granny Smith Green Apple sliced and cored
- 2 oz package Goji Berries
For the Dressing:
- ¼ cup EVOO
- ¼ cup Apple Cider Vinegar
- ¼ cup Honey
- ¼ teaspoon Sea Salt
- ¼ teaspoon Pepper
In large salad bowl add Spinach and top with Feta, Pecans, Apple, and Goji Berries.
In a small glass jar add EVOO, Apple Cider Vinegar, Honey, Salt, and Pepper.
Put a lid on the jar and shake vigorously until blended.
Pour dressing onto salad.
Enjoy!
