These Sweet Potato Fritters are easy to make and so delicious! The natural sweetness of the Potato paired with the Onions and seasonings blend perfectly together. I also made a Garlic Parmesan Sauce to go with this, that is a must try!
1Large Sweet Potato peeled and shreddedabout 3 cups
1cupRed Onion dicedabout ½ of a large one
1teaspoonSmoked Paprika
½teaspoonSea Salt
½teaspoonBlack Pepper
¼cupGluten Free All Purpose Flour
1teaspoonBaking Powder
1teaspoonCorn Starch
2Eggs
For Garlic Parmesan Sauce:
1cupMayo
1CloveMinced Garlic
¼cupGrated Parmesan
Instructions
In a large skillet add enough Corn Oil to just cover the bottom, heat over med/high heat
In a large bowl add Paprika, Salt, Pepper, Flour, Baking Powder, Corn Starch and Eggs
Whisk until all is mixed well
Add Sweet Potatoes, Onions and stir to combine
Working in batches, drop Sweet Potato mixture by ¼ cupfuls into oil; press slightly to flatten
Cook 2-3 minutes each side, or until desired crispiness
Drain on paper towels
Mix together ingredients for the Garlic Parmesan Sauce and serve with the Sweet Potato Fritters

Notes
Make sure you use a refined oil with at least a 400 degree Fahrenheit smoke point. I used Corn Oil, but you could also use Avocado, Grapeseed or refined Coconut Oil.
