Calamarata with Bacon in a fresh Tomato Sauce (Gluten Free)


  • 250 grams Calamarata (I used Gluten Free)
  • 2 Tbs EVOO
  • 6 slices Bacon chopped
  • 20 Cherry or Grape Tomatoes halved
  • 1 small Shallot finely chopped (about 2 Tbs)
  • Pinch of Pepper
  • Fresh Basil for garnish


  1. Cook pasta as directed on package or until al dente
  2. While the pasta is cooking start the rest
  3. In a large frying pan add EVOO, heat over med/high heat
  4. Add Shallots and Bacon
  5. Sauté until Bacon is about half way cooked (2-4 minutes)
  6. Add Tomatoes, sauté 2-3 minutes until Tomatoes start to break down into a sauce form
  7. Add a bit of pasta water if it gets too dry
  8. Drain pasta and reserve 1/2 cup of the water
  9. Add pasta to sauce, add in a little bit of the pasta water at a time until desired sauce consistency
  10. Sauté 2-3 minutes
  11. Add fresh Basil for garnish and serve
  12. Enjoy!
