This meal is super easy to make too. It literally took about 15 minutes to make, which makes it perfect for those busy weeknights.

Calamarata with Bacon in a fresh Tomato Sauce (Gluten Free)
- Prep Time: 10 mins
- Cook Time: 15 mins
- Total Time: 25 mins

Ingredients
- 250 grams Calamarata (I used Gluten Free)
- 2 Tbs EVOO
- 6 slices Bacon chopped
- 20 Cherry or Grape Tomatoes halved
- 1 small Shallot finely chopped (about 2 Tbs)
- Pinch of Pepper
- Fresh Basil for garnish
Instructions
- Cook pasta as directed on package or until al dente
- While the pasta is cooking start the rest
- In a large frying pan add EVOO, heat over med/high heat
- Add Shallots and Bacon
- Sauté until Bacon is about half way cooked (2-4 minutes)
- Add Tomatoes, sauté 2-3 minutes until Tomatoes start to break down into a sauce form
- Add a bit of pasta water if it gets too dry
- Drain pasta and reserve 1/2 cup of the water
- Add pasta to sauce, add in a little bit of the pasta water at a time until desired sauce consistency
- Sauté 2-3 minutes
- Add fresh Basil for garnish and serve
- Enjoy!
