This Easy Quinoa Enchilada Casserole comes together in about 30 minutes including prep time and is loaded with flavor!

Ingredients

  • 1 cup dry Quinoa
  • 2 cups water
  • 1 4oz can chopped Green Chilis
  • 10 oz Enchilada Sauce
  • 1/2 cup frozen Corn
  • 1 can Black Beans drained and rinsed
  • 6 Green Onions chopped
  • 1/2 cup fresh Cilantro chopped
  • 1/2 tsp Cumin
  • 1/2 tsp Chili Powder
  • 1 cup shredded Mexican Cheese divided
  • 1 cup shredded Mozzarella Cheese divided
  • 1 Avocado pitted an diced
  • 2 Roma Tomatoes chopped
  • 2 cloves Garlic minced

Instructions

  1. In medium sauce pan add Quinoa and water.
  2. Bring to boil, then cover and turn heat on low for 15 minutes.
  3. While quinoa is cooking, prep the rest of the ingredients.
  4. In large bowl add green chilis, corn, beans, green onions, cilantro, enchilada sauce, cumin, chili powder, garlic, 1/2 cup Mexican cheese, and 1/2 cup mozzarella cheese.
  5. Preheat oven to 375 degrees.
  6. Add cooked quinoa, mix well.
  7. In 2 Qt casserole dish spray bottom and sides with non stick cooking spray.
  8. Add mixture from bowl into 2 Qt casserole dish.
  9. Top with remaining cheese.
  10. Bake 15-20 minutes until bubbly and cheese is melted.
  11. Garnish with avocado and tomato.
  12. Enjoy!
