Garlic Lemon Salmon with Brussels Sprouts

This Garlic Lemon Salmon with Brussels Sprouts is such an easy dinner. Everything bakes on one sheet pan making cleanup a breeze!

Ingredients

Units Scale
  • 1 lb Salmon fillet
  • 1 lb Brussels Sprouts stems remove and cut in half or quartered depending on how big they are
  • 6 Garlic cloves minced
  • 4 Tbs EVOO divided
  • 2 Lemons sliced

Instructions

  1. Preheat oven to 400 degrees Fahrenheit
  2. Place Brussels in a large bowl
  3. In a small bowl mix together half of the Garlic and 2 Tbs EVOO
  4. Pour over the Brussels and toss to coat them well
  5. Place Brussels on a sheet pan in a single layer
  6. Bake 15 minutes
  7. Place Salmon fillets on sheet pan
  8. Mix together the rest of the Garlic and 2 Tbs EVOO
  9. Pour over each Salmon fillet
  10. Place Lemon slices over Salmon and Brussels
  11. Bake 15-20 minutes or until Salmon is cooked through
  12. Enjoy!
