Healthy Turkey Zoodle Soup

Ingredients

Scale
  • 2 Tbs EVOO (extra virgin olive oil)
  • 1 Yellow Onion finely chopped
  • 3 cloves minced Garlic
  • 3 Carrots peeled and chopped into 1/2 inch pieces (about 1 cup)
  • 3 Celery Stalks chopped into 1/2 inch pieces (about 1 cup)
  • 1 Tbs fresh Thyme
  • 1 Tbs fresh Rosemary chopped
  • 4 cups Chicken Broth
  • 2 1/2 cups cooked Turkey
  • 1 Bay Leaf
  • 1/2 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • 2 large Zucchini’s spiralized

Instructions

  1. In 6 Qt Dutch Oven heat EVOO over med-high heat
  2. Add Onion and saute 2-3 minutes until translucent
  3. Add Garlic and saute 1 minute
  4. Add Carrots and Celery, saute 2-3 minutes
  5. Add Thyme and Rosemary, stir in for 1 minute until aromatic
  6. Add Chicken Broth
  7. Add Turkey
  8. Add Bay Leaf
  9. Add Salt and Pepper
  10. When soup begins to boil, reduce heat to med-low
  11. Simmer about 15 minutes, stirring occasionally, until Carrots have softened
  12. Remove Bay Leaf and discard
  13. Add Zucchini noodles and simmer 3 minutes
  14. Serve immediately
