Lemon Thyme Salmon with Zucchini

This Lemon Thyme Salmon with Zucchini can be ready in about 20 minutes and all on one sheet pan! The Salmon comes out perfectly flaky and the Zucchini is the perfect pairing for this!

Ingredients

Units Scale
  • 2 4oz Salmon fillets
  • 2 Zucchinis chopped into bite size pieces
  • 1 Lemon sliced
  • 23 Tbs EVOO
  • 23 tsp dried Thyme
  • Sea Salt and Pepper to taste

Instructions

  1. Preheat oven to 400 degrees Fahrenheit
  2. Place Salmon and Zucchini on sheet pan, spread everything in a single layer
  3. Drizzle EVOO over everything
  4. Place Lemon slices over Salmon and Zucchini
  5. Sprinkle with Thyme, Sea Salt and Pepper
  6. Bake 15-20 minutes until Salmon is cooked through
  7. Enjoy!
