This Mediterranean Lentil and Kale Salad is loaded with so much goodness! It tastes even better the next day which is great for meal prepping!

- 1 Bunch Red Kale chopped and thick stems removed
- 1 Cup Cooked Lentils
- 1/2 Cup Sliced Red Onions
- 15–20 Pitted Kalamata Olives
- 1/2 Cup Chopped Feta
For the Dressing:
- 1/4 Cup EVOO
- Juice from 1 Lemon
- 1 tsp Dried Oregano
- 1/4 tsp Sea Salt
- 1/4 tsp Black Pepper
- Add Kale to a large bowl
- Mix together all of the ingredients for the dressing and pour over Kale
- Massage Kale for about 1 minute to coat the dressing evenly and soften the leaves
- Add in Lentils, Kalamata, Red Onion, and Feta
- Mix together and serve
- Enjoy!
