This Mediterranean Lentil and Kale Salad is loaded with so much goodness! It tastes even better the next day which is great for meal prepping!

Mediterranean Lentil and Kale Salad

I have been eating Greek Salads for the last few weeks. Let’s just say I’ve been a little obsessed with them lately. I decided to mix up the traditional Greek Salad and use Kale instead.

I also had a package of Lentils in my cupboard that was getting close to the expiration date, so I thought hey why not throw those in too!

That’s the beauty of building salads, you can mix it up to something different every time!

I’ve been making my own salad dressing for a long time. It’s just so much easier and tastes so much better than store bought dressings. 

For this dressing I used:

  • 1/4 Cup EVOO
  • Juice from 1 Lemon
  • 1 tsp Dried Oregano
  • 1/4 tsp Sea Salt
  • 1/4 tsp Black Pepper

That’s it! So simple and so fresh!

I prepped the Lentils the day before I made this so they had a chance to cool down in the fridge.

Then I chopped some Red Kale up. I removed the thick stems and just used the leaves. You can always use the stems in smoothies, juices, or soups if you don’t want them to go to waste.

After making the dressing I poured it over the Kale in a bowl and massaged it for about a minute. This helps soften the Kale so it’s not as tough to chew.

Then I mixed in the Lentils, Kalamata, Red Onion and Feta.

The best part about this Mediterranean Lentil and Kale Salad is that you can make this ahead of time, because it gets better and better each day!

I meal prepped this salad for my lunches and seriously by day 3 it was still super delicious!

Ingredients

Scale
  • 1 Bunch Red Kale chopped and thick stems removed
  • 1 Cup Cooked Lentils
  • 1/2 Cup Sliced Red Onions
  • 15–20 Pitted Kalamata Olives
  • 1/2 Cup Chopped Feta

For the Dressing:

  • 1/4 Cup EVOO
  • Juice from 1 Lemon
  • 1 tsp Dried Oregano
  • 1/4 tsp Sea Salt
  • 1/4 tsp Black Pepper

Instructions

  1. Add Kale to a large bowl
  2. Mix together all of the ingredients for the dressing and pour over Kale
  3. Massage Kale for about 1 minute to coat the dressing evenly and soften the leaves
  4. Add in Lentils, Kalamata, Red Onion, and Feta
  5. Mix together and serve
  6. Enjoy!
