One Skillet Cheesy Chipotle Chicken Broccoli & Rice

Ingredients

  • 1 lb Chicken Breasts cut into bite size pieces
  • 1 cup Brown Basmati Rice
  • 2 cups Chicken Broth
  • 1/2 tsp ground Peppercorn
  • 1/2 tsp Chipotle Chili Powder
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 Tbs Olive Oil
  • 2 cups frozen Broccoli
  • 1 cup shredded Mexican Cheese

Instructions

  1. In 9 inch skillet add Olive Oil, Chicken, and seasonings.
  2. Cook chicken over medium heat until chicken is no longer pink, about 5 min.
  3. Add Rice and Chicken Broth.
  4. Bring to boil, then cover and reduce heat to low.
  5. Simmer for 30 minutes (double check the time on the rice package as all rice is cooked different).
  6. Add Broccoli, stir in and cover.
  7. Cook additional 10 minutes.
  8. Add Cheese, cover and cook 3 min until cheese is melted.
  9. Enjoy!
