This One Skillet Cheesy Chipotle Chicken Broccoli and Rice is so delicious and super easy to make! This my friends is true comfort food!

Cheesy Chipotle Chicken Broccoli and Rice

One of my sons favorite dishes is Chicken and Rice. Oddly enough this was one of my favorite dishes when I was growing up as well…hmmm.

Growing up when we had Chicken and Rice it was usually made in a hot-dish – Yeah You Betcha (insert my Minnesota accent here). Yes we called them Hot-Dishes not casseroles. Every hot-dish was made with some sort of cream of something soup.

Chicken and Rice usually had cream of chicken or cream of rice in it. Well since I am now Gluten Free, no more cream of whatever soup can for me! Which is probably good, because that stuff is not exactly healthy for you.

So I’m always on a quest to try and replicate some of the dishes I grew up with back in Minnesota, but in a healthier Gluten Free sort of way.

This dish comes together so easily. I start by cooking the chicken in the skillet with the seasoning sprinkled on top first. I cook it for about 5 minutes until it’s no longer pink.

Then I added the rice and chicken broth, give it a little stir. Bring it to a boil, then simmer on low until rice is almost fully cooked. I say almost fully cooked, because at the end you will need to add the broccoli for another 8-10 minutes.

Now rice cooking times will vary. I don’t advise using the minute rice, it’ll be too mushy.

I used Brown Basmati Rice. The directions on the rice package say to cook this rice for 40 minutes. So my cooking directions in this recipe adhere to that. If your rice package says cook for 30 minutes, then you would need to add the broccoli in at the 20 minute mark. Make sense? Ok good.

Here’s what I love about this dish:

-It’s über cheesy and delicious.

-You only need to use 1 skillet, which makes for easy clean up!

-It has a bit of a kick from the Chipotle seasoning, but not so intense that the kiddos can’t eat it. If you want it less spicy, just cut back on the Chipotle seasoning.

-This makes great leftovers – that is if there’s any left!

-It tastes like down home cooking, but healthier.

Ingredients
  

  • 1 lb Chicken Breasts cut into bite size pieces
  • 1 cup Brown Basmati Rice
  • 2 cups Chicken Broth
  • 1/2 tsp ground Peppercorn
  • 1/2 tsp Chipotle Chili Powder
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 Tbs Olive Oil
  • 2 cups frozen Broccoli
  • 1 cup shredded Mexican Cheese

Instructions
 

  • In 9 inch skillet add Olive Oil, Chicken, and seasonings.
  • Cook chicken over medium heat until chicken is no longer pink, about 5 min.
  • Add Rice and Chicken Broth.
  • Bring to boil, then cover and reduce heat to low.
  • Simmer for 30 minutes (double check the time on the rice package as all rice is cooked different).
  • Add Broccoli, stir in and cover.
  • Cook additional 10 minutes.
  • Add Cheese, cover and cook 3 min until cheese is melted.
  • Enjoy!

    This is an amazing recipe!! I chose to go without the broccoli and served it in a Boston lettuce wrap with salsa and cream cheese. Be still my little chubby heart, it was so great!! That you for the alternative solution to the traditional recipe ?
